The bull-like monster raises his axe in challenge as he appears on the far side of the arena. Shaking his heavy head and scraping with cleft feet in the ground the minotaur snorts in anticipation. After a few practice swings the gong sounds and the large humanoid rushes off.

Zar'Da tracked his opponent's path as he too moved. As soon as he caught a glimpse of the minotaur the Shaman fired. Unfortunately, due to his movement and the creature's cover Zar'Da hit one of the pillars instead.

The bull-headed monsters growls before pushing forward, squeezing between the central pillars, straddling the altar and eventually emerging on the other side right next to Zar'da.

Against his better judgment Zar'Da stands his ground against the bull headed monstrosity. Releasing his crossbow which swings to his back on it's strap the drowkin activates the magic of the crystal embedded in the hilt of his slightly curved sword causing it to appear in his hand. With a mighty crosscut the Shaman scores first blood.

The minotaur hollers in pain, evidently surprised by the ferocity and strength of his opponent. Bringing his mighty axe around the beast scores a solid hit, wincing as the acid burns its arms and hands. It tries following up with a second swing and poking Zar'Da with its horns, but is far from able to penetrate the dragon shaman defences.

Zar'Da took the viscous hit with stoic silence. When the minotaur missed with his third attack the tricky drowkin activated the magic of his bracers allowing him to counter strike quickly striking true. The shaman then tried to cut the beast again but the minotaur turned aside his sword. Zar'Da quickly activated the magic stored in the magic anklet he wore to bend space, teleporting out of reach of the minotaur then promptly made his way into the stone pillars.

The minotaur follows closely behind, but remains in the open and strikes hard at the drow-kin between the pillars.

Not sure what you mean by that, but part of what you ask for is covered by the rules for sundering:

You can use a melee attack with a slashing or bludgeoning weapon to strike a weapon or shield that your opponent is holding. If you’re attempting to sunder a weapon or shield, follow the steps outlined here. (Attacking held objects other than weapons or shields is covered below.)

Step 1
Attack of Opportunity. You provoke an attack of opportunity from the target whose weapon or shield you are trying to sunder. (If you have the Improved Sunder feat, you don’t incur an attack of opportunity for making the attempt.)

Step 2
Opposed Rolls. You and the defender make opposed attack rolls with your respective weapons. The wielder of a two-handed weapon on a sunder attempt gets a +4 bonus on this roll, and the wielder of a light weapon takes a -4 penalty. If the combatants are of different sizes, the larger combatant gets a bonus on the attack roll of +4 per difference in size category.

Step 3
Consequences. If you beat the defender, roll damage and deal it to the weapon or shield. See Table: Common Armor, Weapon, and Shield Hardness and Hit Points to determine how much damage you must deal to destroy the weapon or shield.

If you fail the sunder attempt, you don’t deal any damage.

Sundering a Carried or Worn Object
You don’t use an opposed attack roll to damage a carried or worn object. Instead, just make an attack roll against the object’s AC. A carried or worn object’s AC is equal to 10 + its size modifier + the Dexterity modifier of the carrying or wearing character. Attacking a carried or worn object provokes an attack of opportunity just as attacking a held object does. To attempt to snatch away an item worn by a defender rather than damage it, see Disarm. You can’t sunder armor worn by another character.

OOC: I was just wondering if I can try and acid spit on his weapon to try and take away ONE of his attacks. He's going to crush me if he hits with all three attacks.

Zar'Da once again to the hit with stoic silence ,being no stranger to pain due to his years at the hands of his evil kin. Allowing the strength of the hit to move him back a step Zar'Da lifts his right foot and activates the magic in his heavy boots. When his foot hits the ground a wave of earth shaking energy moves out in front of him shaking the ground under the minotaur and causing cracks along the pillars. Dropping into a defensive stance the Dragon Shaman activate done of his other gifts, a light blue aura replacing the sickly green one from earlier, his wounds beginning to knit themselves back together slightly.

  [Standard] Use Boots of Stomping: 15 foot cone: Ref Save DC13 or
             fall prone and take 1d4 non lethal damage.

The minotaur braces against the shockwaves and remains standing. Seeing the dragon shaman step away, he snorts and adjusts his position to be able to strike once more in between the pillars.

OOC:Damn, I'm getting my ass kicked!

Things were not going well for the tricky Dragon Shaman. This last hit almost sent him to his maker. Quickly he activates his anklet once more and appears on the other side of the alter where he opens his mouth and spits a line of sizzling green acid at the minotaur. Without waiting to see the outcome the drowkin takes off running out of the stone circle, his blueish aura healing him ever so slightly.

The bull-headed monstrosity takes the line of acid head on, while skirting the ring of stone in order to get close to the elf once more. Panting heavily, and bleeding from deep cuts, the minotaur still remains a awesome (or awful) sight.

This was it, Zar'Da could feel his time was near. The bull headed monster could cover too much ground and the drow was out of tricks to keep his distance, so he went on the offensive as a last ditch effort. Setting his feet firmly the Shaman switched his gifts once more, a reddish aura replacing the cool blue one that had been knitting his wounds back together, and swung his sword from right shoulder down to left hip and scored a devastating hit, the aura adding to the damage he was able to inflict.

Indeed it was! The monster is cut wide open by the powerful sword-swing and topples over, bellowing mightily as it hits the ground. Clawing the earth for a few moments it then lies still.
