System: I would heavily lean just towards freeform. In Solo games systems tend to be a pain to deal with, and not provide that much over just describing things. In multi-player games (and especially at the table) I tend to love systems for combat resolution and the like, but with solo PBP I've found it's a bit clunkier. Should I allow people to optionally push for a system? Or bar it entirely?
If it's solo, system matters not, but where there's threat of death I'd say systems are the way to go. Same for group games. In particular I have been on a Modern AGE kick, so that's worth noting on its own.

Depends on the fun you're going for. If you like mystery to cause tension between people who are supposed to be allies it's cool if you can keep it from coming to a boil between players. If you can't, maybe getting the full story will help
players know where the characters are coming from, even if the other characters don't.

I have an incredibly strong bias in favor of adult games that prevents me from sharing a fair opinion on it.

You can
probably get by with mature since the adult games policy seems to hit sex stronger than it hits violence (much like the American movie industry), but if you want insurance, go with the other.

I'd say don't bother having that as a qualifier. You are in here for the games you want to run, everyone knows that, just be sure to let them know that their ideas are welcome and let the rest fall into place.
