My probably-fuzzy thinking was that the two linguists could/would have linguistic debates over the various languages, especially since there are so many languages to deal with.
As for Akkadian and Sumerian, nobody speaks either of them because they are dead languages. No one has spoken them in over 800 years. To make matters worse, they are language isolates. That is, they aren't related to any other language on the planet.
In theory, Akkadian and Sumerian were two distinct languages, but because they had so much trade and interaction between them, most folks at the time were bilingual. The two probably merged to become Babylonian. Sumerian became the language of religion, and as such was spoken by priests until around the 13th Century.
On Earth, some of the words probably migrated into Ancient Arabic. These are the ones that Sarah and Soren can recognize. The equivalent is Anglic into English. Anglic is technically a dead language, as it was absorbed by the English. Yet, the 16 most common Anglic words still exist in English, such as father, mother, water, etc.
As linguists, this is information that both Sarah and Soren would know.
