Wood is not the uber-flammable substance most people seem to think it is. I get wood designed for burning for my fireplace, and it can be a serious task to get it going.
In this case, and in this primitive world, the motte is raised dirt creating a man made platform about ten feet about the land around it, and bailey was a wooden palisade, not unlike the image of the forts of the wild west, long straight logs with pointed tops, and a raised walkway on the inside for guards.
The issue with this particular palisade is that the Jotunn who attacked this town, then the party later that day, smashed several sections of the wall to allow his minions entry.
With the population wiped out, and even the survivors (those the Jotunn could find) driven away, the Sn'orks had no problem moving in, looting, etc.
They will leave eventually, they are (to be generous) hunter gatherers and will run out of food when they eat the last of the scraps, corpses and prisoners, but I don't think the party wants to wait for that to happen.
Must admit, I don't get the Sn'ork all-star joke...
