Kate appears to be 5'8 and weighs in at 160 lbs, she has bright blue eyes with a hint of green along the edge of the iris.  She wears her shoulder length copper hair in a single pony tail that she often rests on her neck.  Her form has some subtle curves to it, that is fit although just meeting the requirements for starfleet service.
