FWIW, Meat by Overnight Shipping has come a long way in the last 25-30 years.
It's actually pretty efficient and low-risk...lower, in some cases, than your "local butcher".
It basically gets the same treatment that "live" organs and temperature sensitive medications (like insulin) get: typically, 24-48 hours from door to door. There are gel-based freezer packs that keep the cooler interior well-below freezing (and can do so for months) and very thick industrial-grade coolers.
My brother-in-law has shipped us Omaha Steaks a few times over the last 15-20 years and the improvements to packaging have been really impressive. I would expect any reputable meat merchant to offer similar quality components.
I know folks who use those "gel packs" to keep their insulin cold when off-grid for several days at a time in high summer (100+ F temps, >90% humidity).
I might pull the trigger this year...
