I was talking with the lady behind the counter while she was putting together a few orders (including mine). They had decided they wanted to open a food business...but there are literally dozens of burger joints in the area (granted, most of them are mediocre, but there are two or three really good ones), so they didn't want to try that. There's been a renaissance of pizza places...not just Pizza Hut, Domino's, and Little Caesars, anymore, it seems like almost every town along the interstate has two or three independent pizza places, or smaller regional franchises along with the big national ones, so that was an overloaded market sector...
But I don't know more than maybe two or three places in northern Utah that specialize in spaghetti, and the others are all sit-down, eat-in type places. These guys are the only ones doing take-home spaghetti. It's a small storefront, so rent is probably relatively cheap, they've got a good product, they're right next door to a Winco store so they have pretty decent exposure...I think they may be onto something. If they're going to branch out on anything, I'd say get some more sauce options, maybe another couple of pasta options...but stick with stuff that can be cooked up as fast and served in the same way. I think they were taking care of two other Doordash orders before they got mine dished up, and I was still out the door in under five minutes.
Another change of direction--weird weather today. When I went to work, it was partly clear and looked like it was going to turn into a beautiful, almost Spring-like day. By 1 pm, it had clouded up and looked like it was trying to start raining. By 5 pm, it was a moderate rain. By 7, it had shifted to near-blizzard conditions. By 8:30, the driving snow had turned back to rain and the wind had seriously eased up. By 10:00, it was snowing again. It's now a snow/rain mix. The weather REALLY isn't sure what to do!
