I was actually looking thru the 3.5 books, and thinking that same thing. Although one had a cover which was a different angle of the cover the of the first ed. players handbook which was pretty cool. (And the original AD&D DMG had a horrible cover!)
I thought the art in 3.5 was pretty good. Sure it had some pieces that were not as nice as others, but overall, it was quality stuff.
The art styles changed a lot between editions. There were a lot of line drawings early on (e.g., Otus, Trampier, Sutherland), which eventually morphed to the pseudo-realistic and less cartoony 2nd edition art (probably best characterized by artists like Elmore).
The original 1e DMG, the one with the efreet and the City of Brass, is probably one of my favorite covers. I might like it for sentimental reasons though. As a kid, I had to scrape together $ to buy my own books. I was able to buy the PHB and MM, but could not afford the DMG. One day I was walking home from school (I spent all my bus money) and no kidding, I passed by a bus stop where there was a 1e DMG just sitting on an empty bench!
Looked around. Nobody was around. I snatched that sucker up, hid it in my backpack for a few blocks. Finally, I pulled it out and thumbed through it while walking home.
