So GM correct me if I'm wrong, but if we include Lucien's familiar's scouting effort, there are no unexplored tunnels, right?

No, that's not correct. At the second fork you came to after entering the tunnel, you went right (west), which led you to the tunnels you have been exploring. You have indeed explored everything in those tunnels, but there is more tunnel to explore to the left (east) of the second fork.

Also, I think its funny that we might actually stop to rest just because its been a long day of adventuring and not because we need the long rest. There's a little voice inside me that keeps saying "why stop? everyone is at full health".

Lucien, what exactly is your plan for your familiar while the party rests? What instructions are you giving it?

I tell him to fly down the tunnel until he reaches an intersection or for two hours. If he comes to an intersection, he should pick one path any fly down it for half his remaining time (i.e. 30 minutes if he comes to the intersection after an hour). Then he should return to the intersection and fly down the next option for the same length of time. If he comes to any additional intersections after the first, he should follow the same rules. After 2 hours have passed, he should fly back to camp.

Basically, in four hours, when Lucien wakes up, his familiar will have spent four hours exploring the passage as efficiently as possible.

The party returned to a fork in the tunnels to rest. The tunnels are 15 feet wide.

Lucien ventures ahead into the tunnel from which the group expects the orcs to emerge and looks for a place to hide his flasks of oil where they won't be visible to anyone passing by in the corridor, but where his mage hand will be able to lift them in order to drop them on the orcs. His familiar also flies back down the corridor to notify him when the orcs are getting close.

Rissa waited in silence, casting nervous glances behind them to make sure they weren't surprised again.  She hated this part.  She would likely always hate this part.

I think I forgot to explicitly say this out of character. Lucien is sending his familiar to scout the paths that the group isn't taking. It will fly for no more than an hour down the alternate path before turning back.

This door is definitely too heavy to try to open with Mage Hand right? If it pulls open, is there something I could tie a rope to?

It is too heavy for Mage Hand. There is a metal handle attached to the door that you could tie a rope to.
