I think RPOL is easier than text most of the time, so moving the Curse of Strahd / Gestalt talk over here for the time being.
1) What gestalt rules do you want to use?
2) I'm trying to find some kind of 5E gestalt character guide, but the internet looks sparse. This means it is going to take a minute to come up with two builds.
3) I read a post that said that you can kinda hack a gestalt character sheet using D&D Beyond and a custom sub-class, but in order to do this I think it will be beneficial to have all of the levels planned out -- How does multiclassing work with gestalt characters? e.g. what if I wanted half my build to be a sorcadin and the other have to be a bard? (I do not want that, but as an example)
