There's also the fact that there are no written rules with the Fae. Nothing is set in stone for them (not even the laws of physics). They can, for example, choose whether nor not fire affects them (in one of the changeling stories one of the Fae Lords decided that the changeling wasn't allowed to be warmed by fire).
That said, the Fae do not generally call mortals out on breach of etiquette. They are fully aware that mortals do not understand their rules. They are generally more surprised when someone does know the rules... and that, in itself, can cause more problems than it solves.
Noah, having a Market Merit, is more closely bound to market rules. As a non-changeling, you or Sal could incite violence against any of the Fae and wouldn't be in breach of market rules as you are an outsider.
You'd likely be kicked out of the Market just like you would be if you stepped into any store and started a fight, but that would be it. Noah, however, is bound by more rules than the rest of you... the downside to his merit.
But yes, cold iron is viewed by Fae the same way a stake is viewed by vampires (or silver by werewolves). It's not considered polite to be brandishing it in public... and yes, you can buy things here. Nearly anything you can imagine can be bought or sold.
… the question is the price that must be paid. There are no price tags like in normal markets and the cost of the item may not even be apparent until much later.
