Oni are a classic. Bandits. Ronin. Lung dragons (for talking to, hopefully, rather than fighting!) Naga. Tengu. Nature spirits, fey, or ghosts. All that good stuff! :)

What I'd like to see is a ronin or pair of ronin assassins. A regular nemesis or enemy group for the characters. Maybe the samurai of a rival clan.
I'd also like to see some potential romantic interests.

Well since we have failed our respective quests and dishonored ourselves by falling before the enemy....lol. isnt there a ki based fighter like the psionic soul knife I think...cant remember if there is or if I am crossing some up.
