Not sure if you plan on deciding when these occur randomly, or doing them in some order. I've listed them in my preferred order (from bottom to top) for that reason, but am prepared to fight them however they come, which does admittedly make more sense.

Not sure if it was just your example, but I only spent 20 DTUs (160 hours, or ~6.666 days)
It's also worth noting that with this style of play, it's plausible to get a whopping twelve short rests in a day! Though, it will likely be lower depending on how long it takes to find each beast. Still, it is very likely to be more than a couple, given the absurd number of encounters in this day haha.
