Stones, brush and wood, dumped into the aforementioned badger den. There wasn't much, just enough to build a firepit.

Adam, with Sai watching the shallow side of the hill, you should be (relatively) safe to search at least a few hundred yards downhill. As long as you stop before the trees get taller than goblins, you don't have much to worry about, as long as you don't stumble into a badger's den. If you spend an hour, you can canvass an area that size with little trouble. Drawing a map with the locations of the resources while keeping an eye on your surroundings will add 3 hours to the time it takes, but anyone who uses the map would get advantage on gathering them and be able to do it in half the time. Normally, a survival check to find and gather resources takes four hours, and you have to focus on one type (herbs, animals, etc.) Less time than that, or splitting your focus, drastically reduces the yields. Since you can make a note on a map without having to cover as much distance, you can pay attention to multiple types of resources, but copying the foreman's map (he'll let you borrow it now that he's not using it at the moment) is where a good chunk of that 3 hours comes from.

Which way is North on the map?

Also, how much room do I have to clear additional squares if I need them?

My original plan was to make a hut with a base dimension of 6 meters diameter (roughly 20 ft).

North is the top of the map.

You could clear up to an additional 15 feet in any direction but west. Any farther and you're building on a slope (Though it's only about 5 degrees going east, you could build it up a bit if you want to move farther that way, but it will take longer. If you don't mind being 5 feet from the watchtower, you don't need to clear any.
