In a violent medieval style game, I've usually been more of the school that torture would be evil, but a quick death to an evil creature is not. Whether or not they can defend.
AD&D is pretty much built on the premise of 'kill the humanoids so they don't proliferate and bring misery to innocents.' I've been in numbers of games where good characters give clean, quick deaths to captured humanoids.
Is it really more noble to hack someone apart, slowly, in a fight, and leave them gurgling in their own blood, than send them off with a quick, clean thrust? I don't buy it. Not when speaking of those who just tried to kill you.
To me, that's more a matter of some honor code, than conscience or compassion.
